About This Drink
Brunette

The 7 Brew Brunette is a hazelnut-and-caramel mocha built on a chocolate milk base rather than the half-and-half breve used in most other drinks on the menu, and it is one of the seven founding recipes known as the 7 Originals. A Medium Iced Brunette runs 480 calories with 27g of sugar and 120mg of caffeine from two shots of espresso, and costs $5.75. It is the drink most 7 Brew regulars name when a first-timer pulls up to the window and asks what to order, and it is the reason a lot of people who "do not like coffee" end up in the 7 Brew drive-thru three times a week.

Assembly is simple and happens in front of you at the window, which is part of the fun at a drive-thru-only chain born in Rogers, Arkansas. The crew pumps hazelnut syrup and caramel syrup into the cup, pulls fresh espresso directly over the syrups so the heat dissolves them, then fills the rest of the cup with chocolate milk - one shot for Kids, two for Small and Medium, four for Large. Iced gets ice and a stir; Hot gets steamed chocolate milk with a light foam cap; the Chiller version goes into the blender for a frozen, milkshake-adjacent texture. There is no chocolate sauce added on top of the chocolate milk, which is exactly why the Brunette tastes like a soft, milky mocha instead of a fudge bomb.

What makes the Brunette distinct from every other Original is that chocolate milk swap. Where the Blondie leans clean and buttery on half-and-half, and Sweet and Salty leans salted-caramel-and-white-chocolate, the Brunette lands in nutty-cocoa territory that fans consistently compare to a melted Ferrero Rocher or a liquid Nutella latte. It is sweet by design, but it is also one of the most flexible drinks on the board - half-sweet, sugar-free hazelnut, extra shots, and alternative milks are all standard requests.

TASTE

What Does the 7 Brew Brunette Taste Like?

The first thing you get is aroma, not flavor - lifting the lid or pulling from the straw brings up toasted hazelnut and warm cocoa, closer to a bakery case than a coffee shop. The opening sip is milk-soft and rounded, with the hazelnut arriving first and reading as genuinely nutty rather than artificial praline. It is a toasted, skin-on hazelnut note with a little vanilla behind it.

Mid-sip the caramel takes over and pushes the sweetness up. This is where the drink earns its dessert reputation - buttery, slightly brown-sugary, and thick-tasting even though the liquid itself is not heavy. The chocolate milk works underneath the whole thing as a base layer rather than a headline flavor, giving a mild milk-chocolate sweetness that keeps the espresso from cutting through sharply.

The finish is where the coffee finally shows up. Two shots in a 24oz Medium is a low ratio, so the espresso lands as a gentle roasted bitterness on the back of the tongue that clears the sweetness just enough to make you want another sip. Iced, the texture is thin and drinkable with the chocolate milk giving it a little silkiness. Hot, the steamed milk makes it noticeably richer and the hazelnut aroma triples. The Chiller is the sweetest of the three - blending mutes the espresso and turns the whole thing into a hazelnut chocolate frozen shake.

INGREDIENTS

What's Actually in the 7 Brew Brunette?

Espresso Freshly pulled shots poured directly over the syrups. 1 shot in Kids, 2 in Small and Medium, 4 in Large. Decaf available on request at no charge.
Chocolate Milk The defining ingredient. Replaces the half-and-half breve base used in most other 7 Originals, which is why the Brunette reads as a mocha without any chocolate sauce being added.
Hazelnut Syrup Roughly 1-2 pumps for Small and Medium, 3-4 for Large. Provides the toasted nut character. Sugar-free hazelnut is stocked and swaps in one-for-one.
Caramel Syrup Pumped alongside the hazelnut. This is thin pump caramel, not the thick drizzle sauce, so it sweetens and adds brown-sugar depth without coating the cup.
Ice Standard in the Iced build; blended into the drink for the Chiller version. Ask for light ice on Iced if you want a stronger, less diluted cup.
Whipped Cream Not standard on the Brunette but available on request. Adds roughly 50-80 calories depending on the pour.

Ingredients may vary by location. Always confirm with your barista.

First Time?

How to Order the Brunette for the First Time

Order a Medium Iced Brunette on your first visit. That gets you 480 calories, 27g sugar, 120mg caffeine, and $5.75 spent - enough volume to actually judge the drink and the same caffeine as a Small, which makes the Medium the best value in the lineup. Iced is the truest expression of the recipe because nothing is diluted by steaming or blending.

If you are sensitive to sweetness or you normally drink your coffee black, say "Medium Iced Brunette, half sweet" at the speaker. That cuts the syrup pumps roughly in half, drops sugar to about 14-15g, and lets the hazelnut and espresso read much clearer. If you want more coffee presence without more sugar, add one extra shot - it is 60mg more caffeine and essentially zero additional calories.

Skip the Large on visit one. At 600 calories, 38g sugar, and 240mg caffeine, a 32oz Brunette is a lot of sweet dairy and a full daily caffeine allotment for many people. Get there on visit three, after you know you like it.

Pro tip: Don't be afraid to ask your brewista for recommendations — they love helping first-timers!

How to get a drink similar to the Brunette at other coffee chains

How to Order

Order a Grande Iced Caffe Mocha with 2 pumps of Hazelnut syrup and 2 pumps of Caramel syrup, and ask for 2 percent milk. If you want it closer to the 7 Brew build, ask for one less pump of mocha sauce so the chocolate stays in the background instead of dominating.

Key Difference

About 85 percent similar. The flavor lands in the same hazelnut-caramel-chocolate lane, but Starbucks mocha sauce is more bitter and cocoa-forward than 7 Brew chocolate milk, and Starbucks espresso is a darker roast with more bite. The 7 Brew version is noticeably milkier and sweeter.

Similar flavored drink
How to Order

Order a Medium Iced Caramel Mocha and add hazelnut. Dutch Bros builds mochas with chocolate milk in many markets, so this is the closest structural match to the Brunette anywhere in the drive-thru category. Ask for half the caramel drizzle if you do not want it sweeter than the 7 Brew original.

Key Difference

About 90 percent similar and the closest competitor match available. Dutch Bros syrups run slightly sweeter and the caramel drizzle adds body, so expect a marginally heavier finish. The hazelnut at Dutch Bros reads a touch more candy-like than the toasted note at 7 Brew.

7 Brew Medium (24oz) is $5.75, which is $0.24 per ounce. A Starbucks Grande Iced Mocha with two added syrups runs roughly $6.20 for 16oz, or about $0.39 per ounce. You get 8oz more drink for about 45 cents less at 7 Brew - roughly 38 percent cheaper per ounce.

Best Time to Enjoy

The Brunette is a morning and mid-morning drink for most people. A Small or Medium delivers 120mg of caffeine, which is roughly one strong cup of drip coffee, and the chocolate milk base plus 6-10g of protein means it sits like a light breakfast rather than an empty jolt. Regulars who pair it with a bagel or eggs report it holds them until lunch. It also works extremely well as an afternoon dessert substitute, and this is where the Chiller earns its place. Ordering a Small Chiller at 2pm gives you 280 calories and 120mg caffeine for $4.75 - cheaper and lighter than most bakery-case desserts, and it scratches the same itch.

I have ordered the Brunette probably 200 times and it has never once let me down. It genuinely tastes like a melted Ferrero Rocher - the hazelnut hits first and the chocolate milk keeps it smooth instead of bitter. I do a Medium Iced with an extra shot, which balances the sweetness perfectly and gets me to lunch without a crash. This is the drink I make everyone try on their first 7 Brew run and nobody has hated it yet.

Derek Vasquez1 month ago

Really good drink and my go-to when I want something dessert-like in the morning. My only note is that the standard build is sweeter than I expected the first time - 27g of sugar in a Medium is a lot. I switched to half sweet with sugar-free hazelnut and honestly it tastes better to me now because you can actually taste the espresso underneath. Losing a star only because I wish half sweet were the default.

Michelle Okafor3 months ago

I can see why people love this but it is not for me. I drink my coffee dark and the chocolate milk base basically buries the espresso, so it reads more like a hazelnut chocolate milk with a coffee hint than a mocha. Two shots in a 24oz cup is just not enough for my taste. If you like your coffee to taste like coffee, get the Blondie or add two extra shots to this. If you like sweet, you will probably rate it a 5.

Copycat Recipe

How to Make the Brunette at Home

5 minutes
Ingredients
  • 2 shots (2 oz) fresh espresso, or 1/4 cup very strong brewed coffee cooled slightly
  • 1 tablespoon (0.5 oz) Torani Hazelnut Syrup, or Monin Hazelnut for a deeper roasted note
  • 2 teaspoons Torani Caramel Syrup - use the pump syrup, not the thick Puremade caramel sauce
  • 10 oz cold chocolate milk (a lighter chocolate milk such as Nesquik-style works better than a heavy dark chocolate milk)
  • 1 cup ice
  • Optional: light whipped cream cap
Instructions
1

Pump the hazelnut and caramel syrups into the bottom of a 16oz cup or shaker.

2

Pull the espresso directly over the syrups while it is still hot and stir for 10 seconds so the syrups fully dissolve. This step is what keeps the sweetness even instead of pooling at the bottom.

3

Fill the cup with ice to about three quarters full.

4

Top with the cold chocolate milk and stir or seal and shake five times.

5

For a Hot version, steam the chocolate milk to roughly 150F and pour over the syrup and espresso mixture. For a Chiller version, blend everything with the ice for 20 seconds until slushy.

Lighter Version

Use sugar-free syrups and skip whipped cream to save 100-150 calories.

FAQ

Common Questions

How many calories are in a 7 Brew Brunette?
A 7 Brew Brunette ranges from 180 calories in the Kids 10oz size to 600 calories in the Large 32oz. The Small 16oz is 280 calories and the popular Medium 24oz is 480 calories. Nearly all of those calories come from the chocolate milk base plus the hazelnut and caramel syrups - a Medium carries 30g fat and 27g sugar. The two fastest ways to cut the number are ordering half sweet, which saves roughly 50-60 calories and about 12g sugar on a Medium, or swapping the chocolate milk for almond milk, which brings a Medium down to roughly 300-330 calories.
What is in a 7 Brew Brunette and what does it taste like?
The Brunette is espresso, hazelnut syrup, caramel syrup, and a chocolate milk base. It is the only one of the 7 Originals built on chocolate milk instead of half-and-half breve. The flavor is a soft, milky mocha with toasted hazelnut on the front, buttery caramel through the middle, and a mild roasted coffee finish. The most common fan description is that it tastes like a liquid Ferrero Rocher or a Nutella latte. It is sweet-forward and low on bitterness, which is why it converts a lot of people who normally avoid coffee.
How much caffeine is in a 7 Brew Brunette?
Caffeine comes only from the espresso shots: 60mg in the Kids size (1 shot), 120mg in both the Small and the Medium (2 shots), and 240mg in the Large (4 shots). That means the Medium 24oz has the exact same caffeine as the Small 16oz, so the Medium is the better value if you want volume without extra stimulant. Adding a shot costs 60mg more. Decaf shots are available on request, which drops the drink to roughly 5-10mg total.
What is the difference between the 7 Brew Brunette and the Blondie?
The base is the difference. The Brunette uses hazelnut and caramel on chocolate milk, giving you nutty cocoa flavor and mocha-like sweetness. The Blondie uses vanilla and caramel on a half-and-half breve base, which tastes cleaner, richer, and more like a vanilla caramel latte with no chocolate note. Brunette is the pick if you want dessert and nuttiness; Blondie is the pick if you want the coffee and dairy to stay in front. Many regulars order a Blondie plus hazelnut as a middle ground.
Can you get a 7 Brew Brunette dairy free?
Yes, with a modification. Ask for the chocolate milk to be replaced with oat, almond, or coconut milk plus a pump of chocolate syrup, keeping the hazelnut and caramel as-is. Oat milk holds the closest texture to the original; almond milk saves the most calories, bringing a Medium from 480 down to roughly 300-330. Confirm with the crew that the chocolate syrup at your location contains no milk solids, since the standard drink lists Milk as an allergen at every size.
Is the Brunette 7 Brew best hot, iced, or as a Chiller?
Iced is the most popular and the most accurate to the recipe, since nothing dilutes or mutes the espresso. Hot is the best pick for aroma - steaming the chocolate milk pushes the toasted hazelnut smell way up and makes the drink taste richer. The Chiller is the sweetest and most dessert-like because blending softens the espresso bitterness, so treat it as an afternoon milkshake substitute. Calories and caffeine are the same across all three preparations at a given size.
